Ingredients
  

For the Chicken

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup buttermilk For marinating
  • 1 tablespoon hot sauce

For the Coating

  • 1 cup all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon cayenne pepper More for spicy sauce if desired
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

Preparation

  • Marinate the chicken in a large bowl with buttermilk and hot sauce, ensuring the chicken is fully submerged. Cover and refrigerate for at least 2 hours or overnight.
  • In a separate bowl, combine flour, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.
  • Remove the chicken from the buttermilk and allow excess liquid to drip off. Dredge each piece in the flour mixture and let sit for about 10 minutes.

Cooking

  • Heat about 1 inch of vegetable oil in a large skillet over medium-high heat to 350°F.
  • Add the chicken pieces in batches, frying for 7-10 minutes per side until golden brown and cooked through.
  • Transfer fried chicken onto a wire rack or paper towel to drain excess oil.
  • Mix additional cayenne pepper with hot oil from the frying pan to create a spicy sauce and brush on the underside of sandwich buns.

Assembly

  • Assemble sandwiches by placing hot chicken on the spiced buns, topping with pickles, shredded lettuce, and sliced tomato. Optionally, add mayonnaise or your favorite sauce before closing the sandwich.

Serving

  • Serve the sandwiches while hot.

Notes

For optimum flavor, allow chicken to marinate longer and ensure oil temperature is monitored while frying for best results. Leftovers can be stored in an airtight container and reheated in the oven or air fryer.
