Ingredients
  

For the Chicken

  • 4 pieces chicken thighs, boneless and skinless
  • 1 cup buttermilk For marinating chicken
  • 2 cups all-purpose flour For the coating
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper Adjust for heat preference
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • ½ cup vegetable oil for frying Enough to submerge half of the chicken

For the Sandwiches

  • 4 pieces sandwich buns
  • Pickles for topping
  • Sliced tomatoes for topping
  • Coleslaw for serving

Preparation

  • Marinate the chicken thighs in buttermilk. Cover and refrigerate for at least 1 hour, preferably overnight.
  • In a large bowl, mix flour, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper to make the coating.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Remove chicken from buttermilk, letting excess liquid drip off. Dredge each piece in seasoned flour.
  • Once oil is hot, carefully place the coated chicken in the skillet and fry until golden brown, about 5-7 minutes on each side.
  • Use a meat thermometer to ensure that the chicken reaches 165°F (75°C).
  • Transfer cooked chicken to a wire rack or paper towels to drain excess oil.
  • Prepare the spicy sauce by mixing a little cayenne pepper into the remaining buttermilk or adding hot sauce.

Assembly

  • Toast the sandwich buns lightly if desired and spread the spicy sauce generously on each bun.
  • Assemble the sandwiches by placing a piece of fried chicken on the bottom bun, adding pickles, sliced tomatoes, and a generous helping of coleslaw, then top with the other half of the bun.
