Ingredients
  

For the Marinade

  • 4 tablespoons peri peri sauce (store-bought or homemade) Choose according to your spice tolerance.
  • 1 tablespoon smoked paprika
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 Juice of lemon
  • to taste Salt and pepper

For the Chicken

  • 4 pieces chicken thighs and legs, bone-in and skin-on Bone-in for better flavor.
  • Fresh parsley, chopped for garnish Adds a nice touch to the presentation.

Instructions
 

Preparation

  • In a bowl, combine the peri peri sauce, smoked paprika, olive oil, minced garlic, lemon juice, salt, and pepper. Mix well to ensure all ingredients are incorporated.
  • Place the chicken thighs and legs in a large resealable bag or a bowl. Pour the marinade over the chicken, ensuring each piece is thoroughly coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, or ideally overnight for maximum flavor.

Cooking

  • Preheat your grill or oven to medium-high heat (about 400°F/200°C). If using a grill, make sure it’s well-oiled to prevent sticking.
  • Remove the chicken from the marinade, allowing any excess to drip off. Reserve the remaining marinade for basting.
  • Place the chicken on the hot grill or in the oven. Cook for about 35-40 minutes, turning occasionally and basting with the reserved marinade to keep the chicken moist and packed with flavor.
  • Ensure the chicken reaches an internal temperature of 165°F (74°C) in the thickest part.
  • Once cooked, transfer the chicken to a plate and let it rest for 5 minutes. This helps retain the juicy flavors.

Serving

  • Garnish with freshly chopped parsley and serve hot.

Notes

Use fresh ingredients for better flavor. The chicken can be paired with garlic bread, Mediterranean salad, or coleslaw. For a different twist, consider using turkey thighs or vegetables in the same marinade.
