Mushroom and Jackfruit Stir-Fry with Soba

Ingredients
  

Noodles

  • 8 ounces 1 (8 ounce) package dried soba noodles Use gluten-free soba for a gluten-free version.

Sauce

  • 1 cup 1 cup low-sodium vegetable broth
  • 1/4 cup 1/4 cup coconut aminos For a gluten-free option.
  • 2 tablespoons 2 tablespoons rice vinegar
  • 1 tablespoon 1 tablespoon brown rice syrup Can substitute with maple syrup.
  • 1 tablespoon 1 tablespoon toasted sesame oil
  • 1 tablespoon 1 tablespoon grated fresh ginger
  • 1 clove 1 clove garlic, minced
  • 2 teaspoons 2 teaspoons cornstarch To thicken the sauce.
  • 1 pinch 1 pinch ground white pepper

Main Ingredients

  • 16 ounces 1 (16 ounce) can green jackfruit in brine, drained Rinse the jackfruit before use.
  • 8 ounces 8 ounces fresh mushrooms, sliced Any variety of mushrooms can be used.
  • 2 stalks 2 stalks green onion, sliced diagonally Reserve some for garnish.
  • 1 small 1 small red bell pepper, sliced into strips
  • 2 pieces 2 Thai chiles, chopped Adjust according to preferred spice level.
  • 2 cups 2 cups baby spinach leaves
  • 2 tablespoons 2 tablespoons light vegetable oil For sautéing.

Instructions
 

Preparation of Noodles

  • Start by boiling water in a large pot. Once boiling, add the soba noodles and cook for about 5 minutes until tender yet firm. Drain and rinse under cold water. Set aside.

Prepare the Sauce

  • In a mixing bowl, whisk together the vegetable broth, coconut aminos, rice vinegar, brown rice syrup, sesame oil, grated ginger, minced garlic, cornstarch, and white pepper to create a flavorful sauce.

Prepare Vegetables

  • Rinse the jackfruit and slice into bite-sized pieces. Clean and slice the mushrooms. Diagonally slice the green onions, saving 1 to 2 tablespoons for garnish. Cut the red bell pepper into strips.

Cooking the Stir-Fry

  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the mushrooms, bell pepper, Thai chiles, green onions, and baby spinach. Sauté for a few minutes until fragrant and the spinach wilts.
  • Add the jackfruit to the skillet and stir well. Cook until warmed through, then pour in the sauce and toss until everything is coated and the sauce thickens.

Serving

  • Divide the soba noodles into bowls, topping with the stir-fry mixture. Garnish with reserved green onions.

Notes

For additional flavor, consider adding sesame seeds or a drizzle of sesame oil when serving. This dish pairs well with herbal tea or sparkling water.
