Meat Mixture

  • 1 pound ground beef or lamb Choose quality meat for best flavor.
  • 1 medium onion, finely grated Finely grated for better texture.
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped Can add other herbs like mint for variation.
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon allspice
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon olive oil Used for brushing skewers before cooking.
  • Skewers (if grilling) Soak wooden skewers in water for 30 minutes if using.

Instructions
 

Preparation

  • Place the ground meat in a large bowl.
  • Add the grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, allspice, salt, and pepper to the bowl.
  • Mix the ingredients thoroughly with clean hands until well combined.
  • Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.

Cooking

  • Preheat your grill or skillet over medium heat.
  • Shape the meat mixture into long sausages or cylinders about 1 inch thick, and thread them onto the skewers.
  • Brush the skewers lightly with olive oil, then place them on the grill or skillet.
  • Cook for about 4-5 minutes on each side, or until they reach desired doneness.
  • Remove the skewers from heat and let them rest for a few minutes before serving.
