For the Cake:
- 1 cup butter softened
- ½ cup shortening
- 1 teaspoon vanilla extract
- 3 cups granulated sugar
- 5 large eggs
- 1 teaspoon lemon extract
- ¾ cup Mountain Dew soda or a similar citrus soda
- 3 cups all-purpose flour
For the Glaze:
- 2 cups powdered sugar
- ¼ cup Mountain Dew soda
- 2 tablespoons melted butter
Mix the Wet Ingredients:
In a large mixing bowl, beat together the softened butter and shortening on medium speed for 1 to 2 minutes, until the mixture is smooth. Add the granulated sugar and beat the mixture until it turns light and fluffy. Next, add the eggs, one at a time, along with the vanilla extract and lemon extract. Mix everything together until well combined.
Incorporate the Dry Ingredients:
Gradually add in the all-purpose flour, about 1 cup at a time. After all the flour is mixed in, slowly pour in the Mountain Dew soda. Stir the mixture until it’s just combined. Be careful not to overmix as this can lead to a denser cake.
Bake the Cake:
Pour the cake batter into your prepared bundt or tube pan. Spread it evenly and gently tap the bottom of the pan on the countertop to remove any air bubbles.
