Ingredients
  

For the meatloaf

  • 1 pound ground turkey Lean protein source.
  • 1 cup diced bell peppers Adds sweetness and crunch.
  • 1 cup grated carrots Provides natural sweetness and moisture.
  • 1 cup shredded zucchini Keeps the meatloaf moist.
  • 1 cup breadcrumbs Acts as a binding agent.
  • 1/2 cup onion, finely chopped Enhances flavor.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1/4 cup fresh parsley, chopped For freshness.
  • 1/4 cup milk Moisture component.
  • 1 large egg Acts as a binder.
  • 2 tablespoons Worcestershire sauce For added umami flavor.
  • 1 teaspoon salt To taste.
  • 1/2 teaspoon black pepper To taste.
  • 1 teaspoon dried oregano Adds herby flavor.
  • 1 teaspoon dried thyme Adds savory depth.
  • 1/2 teaspoon smoked paprika Enhances flavor with a smoky note.
  • 1/2 teaspoon cumin Adds earthiness.
  • 1/4 cup ketchup For topping and glaze.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
  • In a large bowl, combine the ground turkey, diced bell peppers, grated carrots, shredded zucchini, breadcrumbs, chopped onion, minced garlic, and parsley.
  • In a separate small bowl, whisk together the milk, egg, Worcestershire sauce, salt, black pepper, oregano, thyme, smoked paprika, and cumin.
  • Pour the wet mixture into the turkey mixture and mix gently until fully combined, being careful not to overmix.
  • Transfer the mixture into the prepared loaf pan, shaping it into a loaf shape and smoothing the top.
  • Spread ketchup evenly over the top of the loaf.

Cooking

  • Bake for 1 hour or until the internal temperature reaches 165°F (74°C).
  • Remove from the oven and let it rest for about 10 minutes before slicing.
