  • 4 pieces boneless, skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1 cup crushed tortilla chips (optional) For added crunch

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with cooking spray or olive oil.
  • In a small bowl, mix the garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this spice mixture over both sides of the chicken breasts.

Cooking

  • Heat a skillet over medium heat and add the olive oil. Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
  • Transfer the seared chicken to the prepared baking dish and pour the barbecue sauce over the top.
  • In a separate bowl, combine sour cream and half the green onions, dolloping this mixture over the chicken.
  • Sprinkle the shredded cheddar cheese on top, followed by the remaining green onions and crushed tortilla chips if using.
  • Cover the baking dish with foil and bake for 25-30 minutes, removing the foil during the last 10 minutes.
  • Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving.

Notes

For best flavor, marinate the chicken in barbecue sauce for a few hours or overnight. Consider garnishing with fresh cilantro or parsley before serving. Store leftovers in an airtight container for up to 3-4 days in the refrigerator.
