Ingredients
  

  • 12 oz pasta spaghetti or your favorite pasta
  • 0.25 cup butter
  • 1 small shallot finely minced
  • 1 tbsp garlic minced
  • 0.25 cup white miso paste
  • 1 cup freshly grated parmesan cheese
  • 1 tsp black pepper freshly ground
  • 0.25 tsp salt
  • 1.25 cups reserved pasta cooking water

Instructions
 

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions, reserving 1 ¼ cups of pasta water before draining.
  • Melt butter in a sauté pan over medium heat. Add minced shallot and garlic, cooking for 3 to 5 minutes until softened and fragrant.
  • Stir in the white miso paste, cooking for another minute to enhance its flavor.
  • Whisk in parmesan cheese, salt, black pepper, and reserved pasta water until the cheese melts and the sauce is creamy.
  • Toss the cooked pasta with the sauce until fully coated. Serve immediately with extra parmesan and red pepper flakes if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat with a splash of water to restore creaminess.
