Instructions
Bring a large pot of salted water to a boil and cook the pasta according to package instructions, reserving 1 ¼ cups of pasta water before draining.
Melt butter in a sauté pan over medium heat. Add minced shallot and garlic, cooking for 3 to 5 minutes until softened and fragrant.
Stir in the white miso paste, cooking for another minute to enhance its flavor.
Whisk in parmesan cheese, salt, black pepper, and reserved pasta water until the cheese melts and the sauce is creamy.
Toss the cooked pasta with the sauce until fully coated. Serve immediately with extra parmesan and red pepper flakes if desired.
