  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup powdered sugar For sweetness and rolling.
  • 2 cups all-purpose flour Base for the cookie dough.
  • 1/2 cup cocoa powder Unsweetened for chocolate flavor.
  • 1/2 teaspoon salt Enhances flavor.
  • 1 teaspoon peppermint extract For mint flavor.
  • 1 cup chocolate chips Semi-sweet or dark, your choice.
  • additional as needed powdered sugar for coating For rolling the cookies after baking.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together softened unsalted butter and powdered sugar using an electric mixer or spatula until light and fluffy, about 3-4 minutes.
  • Gradually add in all-purpose flour, cocoa powder, salt, and peppermint extract. Mix until well combined.
  • Gently fold in chocolate chips, ensuring even distribution.
  • Use your hands or a cookie scoop to form 1 inch balls of dough and place them on a parchment-lined baking sheet.

Baking

  • Bake the cookies for 10-12 minutes. Keep an eye on them; they should be set but still soft in the center.
  • Remove from the oven and let them cool on the baking sheet for 5 minutes.
  • While still warm, roll the cookies in additional powdered sugar for a sweet finish.
  • Allow cookies to cool completely on a wire rack before serving.
