Ingredients
  

Ice Cream Base

  • 480 g 480g or 2 cups heavy cream Use fresh, high-quality heavy cream.
  • 240 g 240g or 1 cup whole milk Whole milk is recommended for creaminess.
  • 100 g 100g or 1/2 cup granulated sugar Adjust sweetness to taste.
  • 1/2 tsp 1/2 tsp fine sea salt
  • 6 large 6 large egg yolks Ensure they are fresh.
  • 1/2 tsp 1/2 tsp peppermint extract Adjust according to preference.
  • 1 1 fresh vanilla bean (scraped) or 2 teaspoons pure vanilla extract Vanilla bean enhances flavor.
  • 1-2 drops Optional: a drop or two of food coloring (green or turquoise) For aesthetic purposes.

Chocolate Mix-In

  • 170 g 170g dark mint chocolate (about 3/4 cup chopped) Chop into small bites for easy mixing.
  • 1/2 tsp 1/2 tsp coconut oil To keep chocolate smooth and liquid.

Instructions
 

Preparation

  • In a medium-sized pot, combine the heavy cream, whole milk, granulated sugar, fine sea salt, egg yolks, and scraped vanilla bean. Whisk these together until they blend smoothly.
  • Place the pot over medium-low heat, stirring gently to avoid boiling. Heat until it reaches around 170°F, thickening slightly.
  • Once up to temperature, remove from heat and strain the mixture through a fine mesh sieve to ensure a silky smooth texture.
  • Stir in peppermint extract and pure vanilla extract. Add food coloring if desired.
  • Cool the mixture to room temperature before transferring to the fridge. Chill for at least 4 hours or overnight.
  • The next day, melt dark mint chocolate with coconut oil using a double boiler or microwave. Pour onto a lined cookie sheet and freeze until set.
  • Churn chilled base in your ice cream machine. Add chopped chocolate when close to soft-serve consistency and mix.
  • Transfer churned ice cream to a freezer-safe container, smooth it out, seal, and freeze for at least 4 hours.

Serving Suggestions

  • Serve in a cone, bowl, or transform into a sundae with toppings like chocolate syrup or whipped cream.
  • Blend with milk for a milkshake or garnish creatively.
