Ingredients
  

Cookie Base

  • 1 C salted butter (at room temperature) Make sure it's soft for easy mixing.
  • 1 C white sugar
  • 1/2 tsp green food coloring Adjust as needed for desired shade.
  • 1 large egg At room temperature.
  • 2 tsp peppermint extract

Dry Ingredients

  • 2 C all-purpose flour (spooned and leveled) Ensure proper measurement for best results.
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Chocolate Chips

  • 1 C mini chocolate chips Plus additional for topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line baking sheets with parchment paper.
  • In a large mixing bowl, cream together the room temperature salted butter and white sugar until light and fluffy.
  • Mix in green food coloring, then add the egg and peppermint extract, and combine well.
  • In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually add the dry mixture to the wet mixture, stirring until just combined.
  • Fold in the mini chocolate chips.
  • Scoop out about three tablespoons of dough for each cookie and place them on the prepared baking sheets, about two inches apart.

Baking

  • Bake in the preheated oven for approximately 11 minutes, until light golden brown on the bottoms.
  • While cookies are still warm, sprinkle extra mini chocolate chips on top.
  • Allow cookies to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for about 30 minutes before baking. Consider serving warm with milk or ice cream for a delightful treat.
