Ingredients
  

For the Cauliflower Crust

  • 1 medium head cauliflower
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt

For Toppings

Instructions
 

Preparation

  • Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • Cut the cauliflower into small florets and pulse them in a food processor until it resembles rice.
  • Transfer the cauliflower rice into a heatproof bowl and microwave it for about 5-7 minutes until soft. Allow it to cool slightly.
  • Once cool, wrap the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  • In a large bowl, combine the cauliflower, egg, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, oregano, and salt. Mix until well combined.
  • Divide the mixture into small portions and shape them into mini rounds on the prepared baking sheet, about ¼ inch thick.

Baking

  • Bake in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
  • Remove the mini crusts from the oven and add your favorite pizza toppings.
  • Return to the oven and bake again for another 5-10 minutes, or until the cheese has melted and the toppings are cooked.
  • Let them cool for a few minutes before serving.

Notes

You can store leftovers in an airtight container in the refrigerator for up to three days or freeze the baked crusts without toppings for up to three months. Reheat directly from frozen with toppings added.
