Ingredients
  

Salad Base

  • 4 pieces ripe peaches, sliced Choose ripe peaches for best flavor.
  • 5 cups mixed greens (such as arugula, spinach, and kale)
  • 1 cup crumbled feta or goat cheese Can substitute based on preference.
  • 1/2 cup toasted pecans or walnuts Alternative nuts can be used.
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved

Dressing

  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish Add just before serving.

Preparation

  • Wash and prepare the fruits and vegetables by rinsing the peaches, greens, and cherry tomatoes thoroughly.
  • Slice the peaches and cherry tomatoes into bite-sized pieces and set aside.

Assembly

  • In a large bowl, combine the mixed greens, sliced peaches, cherry tomatoes, and red onion. Toss gently to mix without bruising the fruit.
  • Drizzle the olive oil and balsamic vinegar over the salad, then sprinkle in salt and pepper according to your taste. Toss again until everything is well coated.
  • Add the crumbled feta or goat cheese and toasted nuts to the salad. Gently fold these in to avoid breaking up the cheese or nuts.
  • Garnish the salad with fresh basil leaves for an aromatic finish.
  • Serve immediately to enjoy the fresh flavors. For a more robust taste, let the salad sit for about 10 minutes before serving, allowing the flavors to meld.
