  • 1/2 cup butter Cut into smaller pieces to help it melt easily.
  • 1 cup sour cream Let sit at room temperature for a smoother blend.
  • 8 ounces cream cheese Allow to warm slightly before mixing.
  • to taste Salt and pepper Adjust based on personal preference.

Preparation

  • Peel and cut the potatoes into 1 to 2 inch chunks.
  • Place the potatoes into a large pot and cover them with salted water.
  • Bring the water to a boil and cook until the potatoes are tender, about 15 to 20 minutes.

Mashing

  • Drain the cooked potatoes and return them to the pot to evaporate any excess moisture.
  • Add the butter, sour cream, and cream cheese to the warm potatoes.
  • Mash with a potato masher or electric mixer until smooth and creamy, being careful not to over-mash.
  • Taste and season with salt and pepper as needed.
