  • 2 medium zucchinis, sliced
  • 1 onion, chopped Preferably yellow or white onion.
  • 2 cloves garlic, minced Fresh garlic works best.
  • 1 can (15 oz) diced tomatoes You can use fire-roasted diced tomatoes for additional flavor.

Spices and Seasonings

  • 1 teaspoon chili powder Adjust to taste.
  • 1 teaspoon cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste

Other Ingredients

  • 1 tablespoon olive oil For sautéing.
  • Fresh cilantro for garnish
  • Shredded cheese (optional) Monterey Jack or pepper jack can be used.

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and sauté until it becomes translucent.
  • Stir in the minced garlic and cook for an additional minute.

Cooking

  • Add the ground beef to the skillet, cooking until browned and no longer pink. Drain excess fat if necessary.
  • Mix in the sliced zucchini, chili powder, cumin, paprika, salt, and pepper. Cook for approximately 5-7 minutes, stirring occasionally, until the zucchini is tender.
  • Pour in the diced tomatoes, allowing the mixture to simmer for another 5 minutes.
  • Taste and adjust seasonings as needed.
  • If desired, sprinkle shredded cheese on top and allow it to melt before serving.

Serving

  • Serve hot, garnished with fresh cilantro. This dish can be served in bowls, with warm tortillas, or over rice.
