  • 10 medium-sized tomatillos, husked and rinsed
  • 2 cloves of garlic, unpeeled
  • 1 small onion, roughly chopped
  • 1-2 pieces jalapeños, depending on your spice preference
  • 1/2 cup fresh cilantro, chopped
  • 2 pieces limes, juiced
  • to taste salt
  • 1 tablespoon olive oil (optional for roasting)

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Place the tomatillos and unpeeled garlic on a baking sheet. If desired, drizzle with olive oil.
  • Roast in the oven for about 15-20 minutes, or until the tomatillos turn slightly brown and start to burst.
  • Once the tomatillos are roasted, remove them from the oven and let them cool for a few minutes.
  • Peel the garlic and add it, along with the roasted tomatillos, to a blender or food processor.
  • Add the chopped onion, jalapeños, cilantro, lime juice, and salt to the blender.
  • Blend the ingredients until you achieve a smooth consistency. Taste and adjust salt as needed.
  • Pour your Mexican Tomatillo Green Sauce into a bowl or jar and let it sit for at least 30 minutes for the flavors to meld.

Notes

To enhance the sauce, consider roasting the tomatillos longer for deeper flavor but avoid burning them. For a creamier version, blend in a bit of sour cream or Greek yogurt before serving. Store in the refrigerator for up to one week or freeze in ice cube trays for longer storage.
