Mexican Tater Tot Casserole
A delicious layers of seasoned ground beef, beans, corn, cheese, and crispy tater tots, perfect for weeknight dinners or gatherings.
Ingredients
Meat mixture
- 1 pound ground beef Can substitute with ground turkey or chicken.
- 1 medium yellow onion, diced
- 1 ounce taco seasoning mix 1 packet
- 4 ounces diced green chilies, drained, canned
- 15 ounces black beans, rinsed and drained, canned
- 1 cup frozen corn kernels
- 10 ounces red enchilada sauce, canned
- 3 cups shredded cheddar cheese, divided Use for both mixing and topping.
Tater Tot Layer
- 32 ounces frozen tater tots
Garnishes and Serving
- Chopped fresh cilantro For garnish.
- Sour cream For serving.
Instructions
Preparation
- Preheat your oven to 375°F (190°C). Grease a 9 x 13-inch baking dish.
- In a large skillet, cook ground beef and onion over medium heat until browned and tender, about 6-8 minutes. Drain excess fat.
- Add taco seasoning, green chilies, black beans, corn, and enchilada sauce to the skillet. Stir to combine and simmer for 8-10 minutes.
- Stir in 2 cups of cheddar cheese until melted and mixed into the beef mixture.
Assembly
- Spread the beef mixture evenly in the prepared baking dish.
- Arrange the tater tots in a single layer over the beef mixture.
Baking
- Bake in the preheated oven for 35-40 minutes, or until tater tots are golden brown.
- Sprinkle the remaining 1 cup of cheddar cheese over the hot tater tots and return to the oven for an additional 5 minutes.
Serving
- Garnish with chopped cilantro and serve hot with sour cream.

Notes
You can make this casserole ahead of time. Store leftovers in an airtight container for up to 3-4 days, or freeze for 2-3 months.
