  • 4 cups corn (fresh or frozen) If using fresh corn, choose ears that feel firm and plump.
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup queso fresco cheese, crumbled
  • 1/2 cup cilantro, chopped Adjust quantity based on taste preference.
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon lime juice
  • to taste Salt and pepper Season according to preference.
  • 1 cup shredded cheese (optional for topping) Add for a golden, bubbly crust.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the corn, sour cream, and mayonnaise.
  • Fold in the crumbled queso fresco cheese.
  • Add chopped cilantro, chili powder, garlic powder, and lime juice, stirring until well combined.
  • Season with salt and pepper to taste.
  • Pour the mixture into a greased baking dish.
  • Sprinkle shredded cheese on top, if desired.

Baking

  • Bake for 25 to 30 minutes, or until golden brown and bubbly.
  • Allow to rest for a few minutes before serving.
  • Garnish with additional cilantro for added freshness.

Notes

To enhance flavor, allow the casserole to cool slightly after baking. For a creamier texture, consider adding cream cheese. You can also add jalapeños or cayenne pepper for extra heat.
