Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts Choose quality chicken for best flavor.
  • 1 teaspoon chili powder Adjust for spice preference.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes Adjust for spice preference.
  • 1/2 teaspoon dried oregano
  • 2 teaspoons paprika Use regular for color or smoked for flavor.
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon salt Add more to taste.
  • 1/4 teaspoon pepper

For the Cheese Sauce

  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 cup milk Use whole milk for creaminess.
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper Adjust for spice preference.
  • 1/4 teaspoon paprika For additional flavor.
  • 1 cup extra sharp cheddar cheese, shredded by hand Freshly shredded cheese melts better.

Instructions
 

Preparing the Chicken

  • Season the chicken breasts with spices: chili powder, garlic powder, onion powder, crushed red pepper flakes, dried oregano, paprika, ground cumin, salt, and pepper. Rub spices thoroughly.
  • Let the chicken rest for 10 to 15 minutes to allow flavors to meld.

Cooking the Chicken

  • Heat a skillet over medium-high heat and add oil.
  • Sear the chicken breasts for 5-6 minutes on each side until golden and cooked through (internal temp should reach 165°F / 75°C).
  • Remove from skillet and let it rest for a few minutes.

Making the Cheese Sauce

  • In a small saucepan, melt butter over medium heat. Whisk in flour to create a roux and cook until light golden.
  • Slowly whisk in milk, stirring constantly until thickened.
  • Add salt, cayenne pepper, and paprika while stirring.
  • Remove from heat and stir in cheddar cheese until melted and smooth.

Plating Your Dish

  • Place each chicken breast on a serving plate and generously pour the cheese sauce over.
  • Garnish with freshly chopped parsley or cilantro if desired.
