  • 1 packet taco seasoning
  • 2 cups shredded Mexican cheese blend
  • 6 flour or corn tortillas
  • 1 cup salsa
  • 1 can black beans optional
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers optional
  • Sour cream for serving

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a 9x13-inch dish.
  • Brown ground beef in a skillet over medium heat, drain fat, and stir in taco seasoning with water or broth. Let it simmer.
  • While beef cooks, chop onions, bell peppers, and other veggies. Cut tortillas into halves or quarters.
  • Spread salsa in the baking dish, layer tortillas, beef mixture, veggies, and cheese. Repeat layers.
  • Cover with foil, bake for 25 minutes, then uncover and bake for 10 more minutes until cheese is golden.
  • Let it cool for a few minutes, then serve with sour cream.
