Ingredients
  

Chicken and Filling

  • 4 pieces chicken breasts Boneless and skinless
  • 1/2 cup sun-dried tomatoes, chopped Use oil-packed for more flavor
  • 1 cup fresh spinach, chopped You can substitute with kale if desired
  • 1/2 cup feta cheese, crumbled Can substitute for goat cheese for a different flavor
  • 2 cloves garlic, minced Add more if you love garlic
  • 1 tablespoon olive oil For mixing with the filling and drizzling on top
  • to taste Salt and pepper Adjust based on personal preference
  • 1 teaspoon oregano Dried oregano can be used
  • 1 teaspoon basil Dried basil can be used

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix together the chopped sun-dried tomatoes, fresh spinach, crumbled feta cheese, minced garlic, olive oil, oregano, basil, and a dash of salt and pepper.

Chicken Preparation

  • Slice each chicken breast horizontally to create a pocket, making sure not to cut entirely through.
  • Stuff each pocket with the feta-spinach mixture, packing it in generously.

Baking

  • Place the stuffed chicken breasts in a baking dish and drizzle olive oil over the top.
  • Bake in the preheated oven for 25-30 minutes until cooked through and juices run clear.
  • Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Serving

  • Allow the chicken to rest for a few minutes before serving for juices to redistribute.
