Ingredients
  

For the Stir Fry

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil For cooking
  • Salt and black pepper to taste
  • 2 cups cooked rice or quinoa For serving
  • Fresh parsley or basil For garnish

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and sauté until it softens, about 3–4 minutes.
  • Stir in minced garlic and cook for another minute.
  • Increase heat to medium-high and add the ground beef. Cook until browned, about 5–7 minutes.
  • Drain excess fat if necessary.

Cooking

  • Add sliced bell peppers and zucchini to the pan. Cook for an additional 5 minutes.
  • Mix in cherry tomatoes, oregano, cumin, and paprika. Season with salt and pepper. Cook for another 3–4 minutes.

Serving

  • Remove from heat. Serve over cooked rice or quinoa.
  • Garnish with fresh parsley or basil.

Notes

Allow the stir fry to cool completely before storing. Keep in an airtight container for up to 3 days in the fridge, or freeze for longer storage.
