Ingredients
  

For the Chicken Marinade

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 2 cloves garlic, minced
  • to taste Salt and pepper

For the Wraps

  • 4 large whole wheat tortillas or wraps
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup hummus
  • 2 cups mixed greens (like spinach or arugula)
  • 1 piece Juice of 1 lemon
  • optional tzatziki sauce for serving

Instructions
 

Preparation

  • Preheat your grill or stovetop grill pan over medium-high heat.
  • In a small bowl, mix the olive oil, dried oregano, ground cumin, minced garlic, salt, and pepper until you have a smooth marinade.
  • Coat the chicken breasts in the marinade and let them marinate for at least 15 minutes.

Cooking

  • Grill the chicken breasts for about 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F.
  • Remove the chicken from the grill and let it rest for a few minutes before slicing into thin strips.

Assembling the Wraps

  • Lay tortillas flat and spread a tablespoon of hummus in the center of each.
  • Evenly distribute the sliced grilled chicken, halved cherry tomatoes, diced cucumber, red onion, crumbled feta, kalamata olives, and mixed greens over the hummus.
  • Squeeze fresh lemon juice over the fillings.
  • Roll each tortilla tightly, folding in the sides to keep the fillings snug. Slice wraps in half diagonally to serve.

Notes

For added moisture, marinate the chicken overnight. You can substitute the whole wheat tortillas with lettuce leaves for a low-carb option. Store leftovers in the refrigerator wrapped tightly for up to 3 days.
