Ingredients
  

Meatballs

  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced

Soup Base

  • 6 cups beef broth Base of the soup
  • 1 can (14.5 oz) diced tomatoes
  • 1 large carrot, diced
  • 1 medium zucchini, diced
  • 2 tablespoons chopped fresh cilantro To stir in before serving
  • 1 teaspoon ground cumin For flavor

Instructions
 

Preparation

  • In a large bowl, mix together ground beef, uncooked rice, diced onion, minced garlic, and season with salt and pepper to taste.
  • Form the mixture into small meatballs, about golf ball size.

Cooking

  • Heat a large pot over medium heat and pour in the beef broth. Allow it to warm up to a gentle simmer.
  • Add diced tomatoes, carrot, zucchini, and ground cumin to the broth.
  • Once the broth is boiling, carefully add in the meatballs, ensuring they are fully submerged.
  • Let the mixture simmer for about 30 minutes, until the meatballs are cooked and vegetables are tender.

Finishing Touches

  • Before serving, stir in chopped cilantro.
