Ingredients
  

Meatball Mixture

  • 1 pound ground beef Use a good quality for best flavor.
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning Feel free to substitute with fresh herbs.
  • to taste Salt and pepper Adjust according to preference.

Soup Base

  • 6 cups beef broth Use low-sodium if preferred.
  • 1 can diced tomatoes (15 oz)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup green beans, chopped
  • to taste Fresh parsley for garnish

Instructions
 

Preparation of Meatballs

  • In a medium-sized bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper.
  • Mix thoroughly with your hands or a spoon until well integrated.
  • Roll the mixture into small meatballs, about one inch in diameter.

Cooking the Soup

  • In a large pot, pour in the beef broth and bring it to a gentle boil.
  • Add diced tomatoes, carrots, celery, and green beans to the broth.
  • Gently lower the meatballs into the pot to avoid breaking them apart.
  • Reduce the heat to a simmer and cook for 25 to 30 minutes until meatballs are cooked through and vegetables are tender.

Serving

  • Ladle soup into bowls and garnish with freshly chopped parsley.
  • Serve with crusty bread or crisp crackers on the side.
