  • 2 pounds choice of meat (beef, chicken, or lamb), cut into chunks Choose your preferred meat.
  • 4 medium-sized potatoes, peeled and cut into chunks
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 4 tablespoons olive oil or vegetable oil Use your preferred cooking oil.
  • 1 tablespoon salt Adjust to taste.
  • 1 teaspoon black pepper Adjust to taste.
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 cup beef or vegetable broth Use beef broth for richer flavor.
  • 1 Fresh parsley, chopped (for garnish) Optional garnish.

Preparation

  • Heat the olive oil in a large pot over medium heat. Add the chopped onions and sauté until they turn translucent, about 3 to 5 minutes.
  • Introduce the minced garlic and cook for another minute, allowing it to become fragrant.
  • Add the meat chunks to the pot, season with salt, pepper, paprika, and thyme, and brown the meat on all sides for about 5 to 10 minutes.
  • Pour in the broth, ensuring the meat is mostly submerged. Bring the mixture to a boil, then reduce the heat to low.
  • Cover the pot and let it simmer for about 45 minutes, or until the meat becomes tender.

Cooking

  • Gently fold in the potato chunks, ensuring they are tucked into the broth for maximum flavor absorption.
  • Cover the pot again and continue to simmer for an additional 30 to 40 minutes, or until the potatoes are soft and cooked through.
  • Give the dish a good stir, taste, and adjust the seasoning if necessary. For a thicker sauce, uncover the pot and let it simmer for an additional 10 minutes.
  • Once ready, remove from heat and let it sit for a few minutes before serving.
  • Garnish with fresh parsley before serving.
