Ingredients
  

For the Chicken Marinade

  • 2 large boneless, skinless chicken breasts Choose high-quality chicken for best results.
  • 1 cup pineapple juice
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon honey
  • Salt and pepper to taste

For the Sandwich Assembly

  • 4 pieces hamburger buns Toast lightly if desired.
  • 1 ripe avocado, sliced
  • 1 cup fresh spinach
  • 1 cup sliced tomatoes
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground black pepper
  • Optional: sliced jalapeños for heat Adjust to taste.

Instructions
 

Marinating the Chicken

  • In a bowl, mix pineapple juice, soy sauce, garlic, ginger, honey, salt, and pepper.
  • Add the chicken breasts to the marinade, making sure they are well coated.
  • Cover and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor.

Grilling the Chicken

  • Preheat your grill or grill pan over medium heat.
  • Remove the chicken from the marinade and discard the leftover marinade.
  • Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear.
  • Let the chicken rest for 5 minutes before slicing it into strips.

Preparing the Sauce

  • In a small bowl, mix mayonnaise, lime juice, and black pepper until well combined.

Assembling the Sandwich

  • Spread a generous amount of the creamy sauce on both the top and bottom bun.
  • Layer the spinach, tomatoes, sliced grilled chicken, avocado, and any optional jalapeños on the bottom bun.
  • Place the top bun gently on the filled bottom bun and serve immediately.
