Ingredients
  

Chicken Marinade

  • 1 cup buttermilk For marinating the chicken
  • 2 teaspoons garlic powder Adds flavor to the chicken
  • 1 teaspoon smoked paprika Adds a smoky flavor

Breading Ingredients

  • 4 pieces boneless chicken breasts Main protein in the sandwich
  • 1 cup all-purpose flour For coating the chicken
  • 2 large eggs For the egg wash
  • 2 cups breadcrumbs To create a crispy coating
  • 1 tablespoon olive oil For frying

Sandwich Assembly

  • 4 pieces hamburger buns Soft rolls for the sandwich
  • 1 cup shredded lettuce Crispy fresh topping
  • 1 ripe avocado, sliced Creamy texture
  • 1 cup fresh pineapple rings Adds a tropical flavor
  • 1 cup mayo Base for the sauce
  • 1 tablespoon sriracha sauce Adds spice to the sauce
  • 1 tablespoon lime juice For acidity in sauce
  • Fresh cilantro for garnish Fresh cilantro Adds freshness

Instructions
 

Preparation

  • Marinate the chicken breasts by combining buttermilk, garlic powder, smoked paprika, salt, and black pepper in a bowl. Add chicken, making sure it is well-coated, cover, and refrigerate for at least 1 hour, preferably overnight.
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  • Set up a breading station with three shallow bowls: one with flour, the second with beaten eggs, and the third with breadcrumbs.

Breading and Cooking

  • Remove each chicken breast from the marinade, letting the excess drip off, then coat in flour, dip in beaten eggs, and finally coat with breadcrumbs.
  • Heat olive oil in a skillet over medium heat and fry the chicken for about 4-5 minutes on each side or until golden brown, or bake for 20-25 minutes until chicken reaches 165°F (75°C).

Sauce and Assembly

  • Mix mayonnaise, sriracha, and lime juice to create the sauce. Adjust the sriracha for desired spiciness.
  • Toast the hamburger buns lightly until golden.
  • Spread sauce on both sides of the bun, layer shredded lettuce, a crispy chicken breast, a slice of avocado, and a grilled pineapple ring, then garnish with cilantro.
