  • 1 pound Chicken Breast, diced
  • 8 ounces Egg Noodles
  • 1 cup Sun-Dried Tomatoes, chopped
  • ½ cup Parmesan Cheese, grated
  • 6 cups Chicken Broth
  • 1 cup Heavy Cream
  • 3 cloves Garlic, minced
  • 1 medium Onion, diced
  • 2 tablespoons Olive Oil
  • 1 tablespoon Italian herbs For seasoning
  • to taste Salt and pepper For seasoning

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, sautéing until they become soft and fragrant (about 3 to 4 minutes).
  • Add the diced chicken breast into the pot and cook until browned (about 5 to 7 minutes).

Cooking

  • Pour in the chicken broth and bring it to a boil.
  • Stir in the egg noodles and chopped sun-dried tomatoes and let everything simmer until the noodles are tender (about 6 to 8 minutes).
  • Reduce the heat, pour in the heavy cream and grated parmesan cheese, and stir to combine.
  • Season with salt, pepper, and Italian herbs. Let it simmer for a few more minutes until thickened.
  • Serve hot, garnished with freshly grated parmesan cheese, sun-dried tomatoes, or herbs if desired.

Notes

For added richness, consider using homemade chicken broth. If you prefer a lighter version, substitute heavy cream with lower-fat milk. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 3 months.
