  • 1 lb gnocchi
  • 2 cups shredded chicken Use rotisserie chicken for quicker preparation.
  • 2 cups spinach Fresh spinach is recommended.
  • 1/2 cup sun-dried tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream Adjust the amount for a lighter soup.
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions
 

Preparation

  • Heat a large pot over medium heat and add a splash of olive oil.
  • Add the diced onion and minced garlic, sautéing until the onion is translucent.
  • Stir in the shredded chicken and mix well.
  • Add sun-dried tomatoes and spinach; stir until the spinach wilts.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Once simmering, add the gnocchi and cook until they start to float.
  • Stir in the heavy cream and grated Parmesan cheese until combined.
  • Season with salt and pepper to taste.

Serving

  • Serve warm in deep bowls, topped with extra Parmesan and cracked black pepper.
  • Pair with crusty bread or a fresh green salad for a complete meal.
