  • 1 cup glutinous rice Make sure to rinse and soak before cooking.
  • 1 cup coconut milk
  • 1 cup fresh ube, peeled and grated Frozen ube can be used as a substitute.
  • 1 piece ripe mango, sliced Ensure mango is ripe for sweetness.
  • 1/4 cup sugar Adjust sweetness to taste.
  • 1/4 teaspoon salt Enhances flavor.
  • 1 tablespoon sesame seeds (for garnish) Toast for added flavor.

Preparation

  • Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight. Drain the rice.
  • In a steamer lined with cheesecloth or a clean kitchen towel, place the soaked glutinous rice. Steam the rice over boiling water for about 30-40 minutes, or until the grains are translucent and tender.
  • While the rice steams, prepare the ube mixture. In a separate pot, combine the grated ube, coconut milk, sugar, and salt. Cook over medium heat, stirring until the sugar dissolves and the mixture thickens slightly, about 5-7 minutes.
  • Once the rice is cooked, transfer it to a large bowl. Gradually mix in half of the ube and coconut mixture, stirring gently to combine. Set the remaining mixture aside for serving.
  • Let the sticky rice cool for a few minutes, then mold it into small serving portions or place it on a serving platter.

Serving

  • Serve the sticky rice warm or at room temperature, drizzling the reserved ube mixture over the top. Add fresh mango slices on the side.
  • Garnish each serving with sesame seeds and mint leaves for added flavor and presentation.

Notes
