Ingredients
  

Crumble Base

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup coconut oil, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Filling

  • 2 ripe mangoes, peeled and diced
  • 1/3 cup honey or maple syrup
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal.
  • In a large mixing bowl, combine rolled oats, flour, brown sugar, salt, and cinnamon. Mix until everything is well incorporated.
  • Add the melted coconut oil to the dry ingredients and stir until the mixture resembles coarse crumbs.
  • Take about two-thirds of the crumble mixture and press it evenly into the bottom of the prepared baking pan to form the crust.
  • In another bowl, toss the diced mangoes with honey or maple syrup, cornstarch, and vanilla extract. Gently mix to coat the mango evenly.
  • Spread the mango mixture over the crust in the baking pan, ensuring an even layer.
  • Sprinkle the remaining crumble mixture over the mango layer.
  • Bake in the preheated oven for 25-30 minutes, or until the crumble is golden brown and the mango filling is bubbly.
  • Once baked, remove from the oven and allow to cool in the pan for about 10 minutes. Then, lift the bars out using the parchment overhang and let them cool completely on a wire rack before slicing.

Notes
