  • 1 piece ripe avocado, diced Should yield slightly to pressure.
  • 1/4 cup red onion, finely chopped Adds flavor and crunch.
  • 1/4 cup fresh cilantro, chopped For garnish and flavor.

Dressing

  • 2 tablespoons lime juice Freshly squeezed is best.
  • 1 tablespoon olive oil Extra virgin recommended.

Preparation

  • Start by preparing all your ingredients: dice the mangoes and avocado, finely chop the cucumber and red onion, and rinse the blueberries.
  • In a large mixing bowl, gently combine the diced mango, cucumber, blueberries, avocado, and red onion.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until well blended.
  • Pour the dressing over the salad and toss gently to combine all the ingredients without mashing the avocado.
  • Finally, sprinkle the chopped cilantro on top and mix a bit more to distribute it throughout the salad.

Serving

  • Serve immediately or let it chill in the refrigerator for about 15-30 minutes to let the flavors meld.

Notes
