Ingredients
  

For the crust and topping

  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar packed
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, melted
  • 1 teaspoon cinnamon optional for extra flavor

For the filling

  • 3 large ripe mangoes, peeled and diced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  • In a large bowl, mix together the flour, oats, brown sugar, salt, and baking powder.
  • Pour the melted butter into the dry ingredients. Stir until crumbly and well combined.
  • Reserve about 1 cup of the crumb mixture for topping. Press the remaining mixture evenly into the bottom of the prepared dish to form the crust.

Filling

  • In another bowl, combine the diced mango, granulated sugar, lemon juice, and cornstarch. Toss lightly to coat the mango.
  • Spread the mango mixture evenly over the crust in the baking dish.
  • Sprinkle the reserved crumb mixture over the mango filling, distributing it evenly.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  • Let the bars cool completely in the pan before slicing into squares.

Notes
