  • 4 cups mixed greens (spinach, arugula, or your choice) Freshness is key; choose seasonal produce if possible.
  • 1 can mandarin oranges, drained (11 oz) For a burst of flavor.
  • 1/4 cup red onion, thinly sliced Adds a crunchy bite.
  • 1/2 cup sliced almonds or walnuts Can be toasted for extra flavor.
  • 1/2 cup crumbled feta cheese (optional) Adds a creamy, salty element.

Dressing Ingredients

  • 1/4 cup olive oil For a rich flavor.
  • 2 tablespoons apple cider vinegar Adds tanginess.
  • 1 tablespoon honey or maple syrup (optional) For sweetness.
  • to taste Salt and pepper Season to preference.

Instructions
 

Preparation

  • Rinse the mixed greens under cold water to remove any dirt or grit, then dry them using a salad spinner or paper towels.
  • In a large salad bowl, combine the washed mixed greens, drained mandarin oranges, thinly sliced red onion, and sliced almonds or walnuts. If using, sprinkle feta cheese on top.
  • In a separate bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup (if using), and a pinch of salt and pepper.
  • Drizzle the dressing over the salad mixture, starting with a small amount to control the dressing level.
  • Gently toss the salad until all ingredients are coated with the dressing without tearing the greens.
  • Serve the salad immediately or chill in the fridge for a few minutes to meld flavors.
