  • 1 package dry vanilla instant pudding mix Sugar-free if preferred
  • 1 large can undrained crushed pineapple
  • 2 medium or large cans drained mandarin oranges Reserve some slices for garnish
  • 1 package (8 oz) Cool Whip Fat-free optional

Preparation

  • In a large mixing bowl, add the dry vanilla instant pudding mix.
  • Pour in the entire can of undrained crushed pineapple and mix together using a whisk or spatula until smooth.
  • Gently fold in the drained mandarin oranges, being careful not to break them.
  • Fold in the Cool Whip until everything is well combined.
  • Cover the bowl with plastic wrap and refrigerate for at least an hour.
  • Serve the salad in a bowl and garnish with reserved mandarin orange slices.
