  • 1 box yellow cake mix Use your favorite brand.
  • 1 can (11 ounces) mandarin oranges, drained Make sure they are well-drained.
  • 1 cup vegetable oil Can substitute with canola oil.
  • 4 large eggs Room temperature eggs work best.

Topping Ingredients

  • 1 can (8 ounces) whipped topping Thawed.
  • 1 package (3.4 ounces) instant vanilla pudding mix Any brand can be used.
  • 1 cup milk Use whole or 2% milk.
  • 1 can (optional) additional mandarin oranges for garnish To enhance visual appeal.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9x13 inch baking pan.
  • In a large mixing bowl, combine the yellow cake mix, drained mandarin oranges, vegetable oil, and eggs. Beat on medium speed for about 2 minutes until the batter is smooth.

Baking

  • Pour the batter into the prepared baking pan and bake for 30-35 minutes.
  • Check for doneness by inserting a toothpick into the center; it should come out clean. Allow the cake to cool completely in the pan.

Topping Preparation

  • In another bowl, mix together the whipped topping, instant vanilla pudding mix, and milk until smooth.
  • Once the cake has cooled, spread the creamy mixture evenly over the top.
  • Garnish with additional mandarin oranges if desired.

Notes

Store leftovers in an airtight container for up to 4-5 days. Consider using cream cheese for a denser topping.
