Ingredients
  

Pasta and Vegetables

  • 2 cups macaroni Cooked according to package instructions
  • 1 cup diced celery Freshly diced
  • 1 cup diced bell pepper Any color of your choice
  • 1 cup diced onion Red or yellow onion works well

Dressing

  • 1 cup mayonnaise For a lighter version, consider substituting with Greek yogurt
  • 1 tablespoon Dijon mustard Adds a tangy flavor
  • to taste Salt and pepper Adjust according to preference

Instructions
 

Preparation

  • Boil water in a large pot.
  • Add macaroni and cook according to package instructions until al dente, approximately 7-9 minutes. Stir occasionally to prevent sticking.
  • Drain the macaroni and let it cool.
  • In a mixing bowl, combine mayonnaise and Dijon mustard. Season with salt and pepper, and mix until smooth.
  • Once the macaroni has cooled, add it to the bowl with the dressing, along with the diced celery, bell pepper, and onion. Gently fold all ingredients together until evenly coated.

Chilling and Serving

  • Cover the salad with plastic wrap or a lid and chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  • Serve in bowls or on a large platter, garnished with fresh herbs if desired.
