Main Ingredients

  • 1 lb ground beef Lean ground beef is recommended.
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 28 oz can marinara sauce Homemade marinara can elevate the flavor.
  • 4 cups beef broth Reduce if you prefer a thicker soup.
  • 2 tsp Italian seasoning
  • 1 cup ricotta cheese For topping.
  • 1/2 cup parmesan cheese, grated For topping.
  • to taste Salt and pepper
  • Fresh basil for garnish

Instructions
 

Preparation

  • Heat a large pot over medium heat.
  • Add the ground beef, breaking it apart, and cook until browned. Drain excess fat.
  • Add the diced onion and minced garlic; cook until the onion is soft and translucent, about 3 to 5 minutes.

Cooking

  • Stir in the marinara sauce, beef broth, and Italian seasoning. Increase heat and bring to a gentle simmer.
  • Let the soup simmer for about 10 to 15 minutes to meld the flavors, stirring occasionally.

Serving

  • Ladle soup into bowls and top each with a scoop of ricotta cheese and a sprinkle of grated parmesan.
  • Garnish with fresh basil leaves and serve hot.

Notes

Store in airtight containers for up to 4 days in the refrigerator. Can freeze for up to 3 months. Reheat on the stove as needed.
