Main Ingredients

  • 4 pieces boneless, skinless chicken breasts Skinless for a healthier option
  • 2 tablespoons olive oil
  • to taste Salt and pepper Season to preference
  • 3 cloves garlic, minced Freshly minced is best
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped Fresh for best flavor
  • 1/2 cup sun-dried tomatoes, chopped Oil-packed for richer flavor
  • 1/4 cup grated Parmesan cheese Adds creaminess
  • 1 teaspoon Italian seasoning
  • to garnish fresh basil leaves Optional for garnish

Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts.
  • Sear the chicken for about 7-8 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F.
  • Remove the chicken from the skillet and set aside.

Cooking

  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in the heavy cream and stir to combine, letting it simmer for a couple of minutes.
  • Add the chopped spinach, sun-dried tomatoes, Italian seasoning, and Parmesan cheese. Stir to combine and melt the cheese.
  • Return the chicken to the skillet, covering it with the creamy sauce. Let it simmer for an additional 5 minutes.
  • Garnish with fresh basil leaves if desired before serving.

Notes
