Ingredients

  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened applesauce
  • 1/2 cup brown sugar or a sugar substitute
  • 1 teaspoon vanilla extract

Add-ins

  • 1/2 cup mini chocolate chips Use mini for better distribution

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the whole wheat flour, baking soda, and salt. Whisk them together to ensure even distribution.
  • In a separate bowl, blend the melted coconut oil, applesauce, brown sugar, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  • Fold in the mini chocolate chips, distributing them evenly throughout the dough.
  • Using a tablespoon, scoop the dough onto the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake for 10-12 minutes, or until the edges turn light golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
