  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon Use high-quality spices for better flavor.
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 cup crushed lotus biscuits (optional) For extra flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Cream together using an electric mixer until light and fluffy.
  • Add the vanilla extract and mix well to incorporate.
  • In another bowl, sift together the all-purpose flour, baking soda, salt, cinnamon, and nutmeg. Gradually add the dry ingredients to the butter mixture, stirring until the dough comes together.
  • If using, gently fold in the crushed lotus biscuits for added texture and flavor.

Baking

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Use a fork to gently press down each dough ball, flattening them slightly.
  • Bake in the preheated oven for 10 to 12 minutes, or until the edges turn golden brown.
  • Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes
