Ingredients
  

For the cookie dough

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened
  • 1/2 cup ground almonds
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the filling

  • 1/2 cup fruit preserves (jam of your choice)

For dusting

  • to taste powdered sugar

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the softened butter and powdered sugar. Cream them together until light and fluffy.
  • Add the vanilla extract and mix well.
  • In a separate bowl, whisk together the all-purpose flour, ground almonds, ground cinnamon, and a pinch of salt.
  • Gradually add the dry ingredients into the creamed mixture, mixing until well combined but not overmixed.
  • Cover the dough with plastic wrap and chill it in the refrigerator for about 30 minutes.

Baking

  • Lightly flour your work surface, then roll out the chilled dough to about 1/8 inch thick.
  • Cut out shapes using cookie cutters, placing half of the cookies on a lined baking sheet.
  • Cut holes in the center of the remaining cookies, then place them on the baking sheet.
  • Bake for 10-12 minutes until lightly golden around the edges.

Assembly

  • Allow cookies to cool completely on a wire rack.
  • Spread fruit preserves on half of the cookies and top with the cut-out cookies.
  • Dust with powdered sugar before serving.
