  • 2.5 cups all-purpose flour Sift before measuring
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • as needed sparkling sugar (for coating) For visual appeal and crunch

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream the softened unsalted butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
  • Add the egg, lemon zest, and lemon juice, and beat until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Roll the dough into small balls, about 1 inch in diameter, and roll each in sparkling sugar.
  • Place the dough balls onto a baking sheet lined with parchment paper, leaving about 2 inches between each.

Baking

  • Bake the cookies for 10 to 12 minutes, until the edges are lightly golden and the centers remain soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
