Ingredients
  

Pizza Base

  • 1 pizza crust 1 pizza crust (store-bought or homemade)

Cheeses

  • 1 cup 1 cup ricotta cheese Fresh ricotta recommended for best flavor.
  • 1 cup 1 cup shredded mozzarella cheese Use fresh mozzarella for optimal melt and taste.
  • 1/4 cup 1/4 cup grated Parmesan cheese Optional, for extra flavor.

Flavors

  • 1 medium 1 medium lemon (zested and juiced) Zest and juice both for enhanced flavor.
  • 2 tablespoons 2 tablespoons olive oil Drizzle for moisture and flavor enhancement.
  • 1 teaspoon 1 teaspoon sea salt
  • 1 teaspoon 1 teaspoon freshly cracked black pepper
  • 1/4 cup 1/4 cup fresh thyme leaves Fresh thyme preferred for better taste.

Optional Toppings

  • 1 cup Arugula for topping after baking Adds a peppery contrast.

Instructions
 

Preparation

  • Preheat your oven to 475°F (245°C).
  • Roll out your pizza crust on a lightly floured surface to your desired thickness.
  • Transfer the crust to a pizza stone or a baking sheet.
  • In a bowl, mix the ricotta cheese, lemon zest, lemon juice, sea salt, and black pepper until well combined.
  • Spread the ricotta mixture evenly over the pizza crust, leaving a small border around the edges.
  • Sprinkle the shredded mozzarella cheese over the ricotta mixture.
  • Add fresh thyme leaves on top.
  • Drizzle olive oil over the entire pizza.
  • If using, sprinkle the grated Parmesan cheese on top.

Cooking

  • Bake in the preheated oven for about 12-15 minutes or until the crust is golden brown and the cheese is bubbling.
  • Once cooked, remove from the oven and let it cool for a couple of minutes.
  • Optionally, add fresh arugula on top for a peppery contrast and slice the pizza.

Notes

For an extra crispy crust, consider using a pizza stone. Pay attention to the quality of your ingredients; fresh ricotta, mozzarella, and thyme make a noticeable difference.
