Ingredients
  

For the Pesto Sauce

  • 2 cups fresh basil This aromatic herb is the heart and soul of your pesto.
  • 2 tablespoons lemon zest Adds a burst of citrusy brightness to the dish.
  • 2 tablespoons lemon juice Infuses the pesto with a tangy freshness.
  • 1/3 cup pine nuts or pumpkin seeds Provides a nutty flavor and creamy texture.
  • 2 cloves garlic Enhances the overall taste with a hint of warmth.
  • 1/2 cup extra virgin olive oil The base of your pesto, giving it richness.
  • 1/3 cup Parmesan cheese or nutritional yeast Adds depth and umami flavor.
  • 1/8 teaspoon salt To enhance the flavors.
  • 1/8 teaspoon fresh cracked pepper For a little heat.

For the Pasta

  • 16 ounces pasta (rotini, fusilli, or penne) The perfect vehicle for your luscious pesto.
  • 1 tablespoon salt for pasta water Ensures the pasta is well-seasoned.

Instructions
 

Prepare the Lemon Pesto Sauce

  • Gather your food processor or blender. Add the fresh basil, lemon zest, and lemon juice. Pulse until well combined.
  • Incorporate the pine nuts (or pumpkin seeds) and garlic cloves, pulsing until finely chopped.
  • Gradually drizzle in the extra virgin olive oil while pulsing until well coated but retains some texture.
  • Stir in the Parmesan cheese (or nutritional yeast), along with the salt and pepper to taste.

Boil the Pasta

  • In a large pot, fill it with water and bring it to a rolling boil. Add a tablespoon of salt to the boiling water.
  • Cook the pasta according to the package instructions, about 8 to 10 minutes for al dente. Reserve half a cup of pasta water before draining.

Prepare the Pesto Pasta

  • In a medium-sized pan over medium-low heat, add the pesto sauce and a few tablespoons of reserved pasta water. Warm for about one minute.
  • Add the cooked pasta to the pan and toss it with the pesto until well coated. Remove from heat.

Plate and Serve

  • Transfer your Lemon Pesto Pasta to serving plates or a large bowl.
  • Garnish with extra Parmesan or fresh basil if desired. Serve immediately.
