Ingredients

  • 1 cup unsalted butter, softened Ensure butter is at room temperature for better incorporation.
  • 1 cup powdered sugar
  • 2 cups all-purpose flour Scoop and level the flour, do not pack it.
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2-3 tablespoons lemon zest (from about 2 lemons) Use fresh zest for the best flavor.
  • 1/4 cup fresh lemon juice Use freshly squeezed juice.
  • 1 teaspoon vanilla extract
  • Additional powdered sugar for dusting Dust after cookies are cooled.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, beat the softened butter and powdered sugar together until creamy and fluffy.
  • Gradually add in the lemon zest, lemon juice, and vanilla extract, mixing well to combine.
  • In a separate bowl, whisk together the flour, cornstarch, and salt. Slowly incorporate the dry ingredients into the wet mixture until combined; the dough should be soft and slightly sticky.
  • Scoop tablespoons of dough and roll them into balls, then place them on the baking sheet evenly spaced.
  • Gently flatten each ball slightly with your fingers or the bottom of a glass.

Baking

  • Bake for 10-12 minutes, until the edges start turning golden, being careful not to overbake.
  • Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Once cooled, dust lightly with additional powdered sugar.
