Ingredients
  

  • 8 oz Pasta Spaghetti or penne
  • 8 oz Feta Cheese Crumbled
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 tablespoon Lemon Zest
  • 2 cloves Garlic Minced
  • 3 tablespoons Olive Oil
  • 0.25 cup Pine Nuts Optional, toasted

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, combine crumbled feta, lemon juice, lemon zest, minced garlic, and olive oil. Mix well.
  • Bake the feta mixture for about 20 minutes, until softened and slightly golden.
  • While the feta bakes, cook pasta in a large pot of salted boiling water according to package instructions until al dente.
  • Reserve a cup of pasta cooking water, then drain the pasta.
  • Add the hot pasta to the baking dish with the baked feta. Stir in reserved pasta water if needed for creaminess.
  • Fold in fresh basil and pepper to taste. Add toasted pine nuts or vegetables if desired.
  • Serve immediately while hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
