Instructions
Preheat the oven to 400°F (200°C).
In a baking dish, combine crumbled feta, lemon juice, lemon zest, minced garlic, and olive oil. Mix well.
Bake the feta mixture for about 20 minutes, until softened and slightly golden.
While the feta bakes, cook pasta in a large pot of salted boiling water according to package instructions until al dente.
Reserve a cup of pasta cooking water, then drain the pasta.
Add the hot pasta to the baking dish with the baked feta. Stir in reserved pasta water if needed for creaminess.
Fold in fresh basil and pepper to taste. Add toasted pine nuts or vegetables if desired.
Serve immediately while hot.
