Ingredients
  

  • 8 oz Orzo Pasta
  • 1 lb Shrimp peeled and deveined
  • 1 cup Feta Cheese crumbled
  • 2 pieces Lemons juice and zest
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic minced
  • Fresh Parsley for garnish chopped

Instructions
 

  • Bring a pot of salted water to a boil. Add orzo and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  • Add shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove from heat.
  • Stir in the cooked orzo, lemon juice, and lemon zest with the shrimp. Toss gently to combine.
  • Fold in the crumbled feta cheese and sprinkle with fresh parsley before serving.
  • Serve immediately, garnishing with additional lemon wedges if desired.

Notes
