Instructions
Bring a pot of salted water to a boil. Add orzo and cook according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
Add shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove from heat.
Stir in the cooked orzo, lemon juice, and lemon zest with the shrimp. Toss gently to combine.
Fold in the crumbled feta cheese and sprinkle with fresh parsley before serving.
Serve immediately, garnishing with additional lemon wedges if desired.
